Toffee apple and pecan Doughnut recipe!


Doughnut


125g Plain flour 


3g baking powder


3g dried yeast


2g salt


20g melted butter


40g whole milk


Warm water



(1) Mix together dry ingredients


(2) Add butter and milk and mix together 


(3) Slowly add warm water whilst mixing until dough is formed


(4) Cover dough with a warm, damp cloth and leave in a warm place to prove


(5) Knock back dough, and roll into 4 equal sized doughnuts and allow to again prove


(6) Fry at 180oC until golden brown


(7) Place onto a cooling rack and allow to cool



Apple filling


250g green apple (peeled and diced)


100g caster sugar


25g butter


1g ground cinnamon 


150ml water



(1) Place a non-stick pan onto the stove on a high heat and allow the pan to get hot


(2) Add diced apples, move continuously and cook until apples start to color


(3) Reduce the temperature of the pan slightly and add butter and continue to cook until golden brown


(4) Add sugar and allow to caramelize until light golden brown


(5) Add water and cinnamon and simmer apples on a low heat until well cooked (note the apples should not be too wet)


(6) Place apples into a blender and blend until smooth


(7) Pass through a fine sieve, cool and retain for later use



Salted toffee sauce


50g Sugar


15g butter


150g cream


3g Sea salt



(1) In a pan on a gentle heat take sugar to a light caramel color


(2) Whilst still on the heat whisk the butter into the sugar until fully incorporated


(3) Add cream, bring to the boil and then simmer until reduced by 1/3 


(4) Add salt and allow to cool to room temperature and retain for later use



Candied pecans


25g pecans


100ml water


75g caster sugar



(1) In a pan add sugar and water, bring to the boil to make a stock syrup


(2) Add pecans to stock syrup and simmer for 5 minuets 


(3) Remove pecans from stock syrup and allow to cool


(4) Fry pecans at 180oC until golden color and allow to cool


(5) Roughly chop pecans and retain for later use



Assembly


(1) Using a long skewer make a hole in the side of the doughnut, push the skewer ¾ into the doughnut and wiggle the skewer around inside to create space for the apple puree 


(2) Using a piping bag fill the doughnut with apple puree


(3) Did the top half of the doughnut in toffee sauce so that the top becomes well covered


(4) Sprinkle chopped pecans on top


(5) Serve and enjoy!
