Ingredients for Chicken Fajita Quesadillas


- Tortillas: 2

- Chicken Breast: 225g

- Red Bell Pepper: 1

- Onion: 1

- Taco Seasoning: 1 tbsp

- Cheese: 1 cup (shredded)

- Butter: 1 tbsp

- Vegetable Oil: 1 tbsp


How to Prepare Chicken Fajita Quesadillas


Cut the chicken breast into thin strips or small pieces, then cut the red pepper and onion into thin strips lengthwise.


 Heat two teaspoons of oil in a skillet over medium heat, then add the chicken.


Season the chicken with taco seasoning and cook, stirring occasionally, until cooked through and golden brown.


Remove the chicken from the skillet and cover to keep warm.


In the same skillet, add the butter and sauté the bell peppers and onions until softened.


Return the chicken to the skillet with the vegetables and stir-fry until heated through and the flavors meld.


Place half of the chicken and vegetable mixture on one side of a tortilla, then add the shredded cheese and fold the tortilla in half.


Repeat with the second tortilla.


Heat the skillet over medium heat, then cook the quesadillas until crispy on both sides and the cheese is melted.


Cut the quesadillas into wedges and serve hot with salsa, guacamole, or sour cream, if desired.
