• 2 teaspoons fresh lemon zest


• 1 cup heavy cream


• 1/2 cup mascarpone cheese


• 1/2 cup sweetened condensed milk


• 1 teaspoon vanilla extract


• 1 pack Ritz crackers (about 200 grams)


• Fresh mint leaves, for sprucing things up


Directions:


1. Mix those berries, sugar, and lemon zest together in a bowl. Let it sit for about 10 minutes to let the berries do their juicy thing.


2. In another bowl, whip up the heavy cream until it starts forming soft peaks. Then toss in the mascarpone, sweetened condensed milk, and vanilla extract. Keep beating until it's all smooth and cozy.


3. Grab a 9x13 inch baking dish and lay down a single layer of Ritz crackers. Break 'em up if you need to fill in any gaps.


4. Spread half of that creamy mixture over the crackers. Spoon on half of the berry mixture, spreading it out nice and even.
